Trisha Yearwoods Slow Cooker Mac and Cheese

Trisha Yearwood’s delicious slow cooker macaroni and cheese recipe can easily be one of your family’s favorite comfort foods. It is a staple in my family. I’m not the only one. Everyone raves about how easy this food is to make, as well as how good it tastes. This healthy meal is a family favorite because of the simple ingredients used and the slightly extravagant presentation.

First, you will need a slow cooker macaroni and cheese mixture. The traditional cheese is Provel. You can use other cheeses as well, just as long as they follow the same nutritional guidelines. A good alternative to Provel are fat free or low fat milk substitutes. A tip for those on a diet: if you are using evaporated milk, you should use skim instead of whole milk.

Second, you will need a jar of cream cheese. If you can’t find any, don’t despair. You can substitute half or some other low-fat milk. A good substitute is 1 percent cottage cheese. If using whole milk, drain off as much as possible before putting the cream cheese in.

Third, you will need two cups of macaroni or pasta. I prefer linguine noodles because I like the taste. You can make your own macaroni using whole milk and pasta or buy it already made. Just drain off as much of the excess liquid as possible before putting the pasta in the sauce. You will also want to add cheese, and herbs, bell pepper, oregano, or any seasonings to the pasta before putting it into the pot.

Fourth, you will make your own pasta sauce. To make your own pasta sauce, simply combine pasta (brown or whole) with red bell pepper, chopped onion, chopped zucchini, garlic, a little salt, and olive oil in a food processor. Process until smooth and creamy. Add any additional herbs or seasonings, such as oregano or Parmesan cheese, to the mixture as you go along. Put the macaroni and cheese into the pot and heat through.

Fifth, you will assemble your macaroni and cheese in the slow cooker. Pour about a cup of water into the pot and put in the pasta mixture. Start squeezing the mixture until the sauce comes out onto your spoon. Put that in the pot and add your milk and any other ingredients. Stir and turn the slow cooker on to bring it to a gentle boil. Cover and let cook on low for about three hours, checking periodically to see if the macaroni and cheese are ready.

Six: When you are ready to serve, mix together your macaroni and cheese. Spread on top of your baked potatoes and garnish with shredded sharp cheddar cheese and drizzle with any additional herbs and spices of your choice. Put in your crockpot and put in your onions, bell pepper, and garlic. Cover and cook on low for about four hours. Check for doneness with a thermometer, and if necessary, double cook until the cheese is melted and the pasta is cooked through.
